Dobry Browar was founded out of love and fascination with craft beer. In the heart of Gniezno, Ania and Bartek Kozłowski have created a place combining a brewery with restaurant and an intimate hotel space. On two floors of the building, visitors can taste the beer brewed on the spot, and in the basement, through the glass wall, see the process of its creation. The main assumption when designing the interior was to create a place open for gatherings. Raw materials used in the project introduce the artisanal and casual character of the interior whereas wooden elements of the interior warm up the dominant metal and concrete. Walking down the street through the windows of the brewery, a copper vat and the main bar are brightly noticeable. The illuminated counter has been finished with raw metal sheet and above it appears a suspended structure made of metal perforated mesh. Lamps made of beer bottles, designed and made for the brewery, bring subtle decorativeness in the venue. The division of the space on the first floor is determined by bottle racks made of reinforced concrete bars. On the first floor, in addition to the traditional bar counter, there is a “beer wall”, i.e. a self-service beer bar.

Z miłości i fascynacji prawdziwym rzemieślniczym piwem powstał Dobry Browar. W samym sercu Gniezna, Ania i Bartek Kozłowscy stworzyli lokal łączący browar z restauracją oraz kameralną przestrzenią hotelową. Na dwóch kondygnacjach budynku można degustować warzone na miejscu piwo, a dzięki przeszklonej ścianie w piwnicy zobaczyć proces jego powstawania. Głównym założeniem podczas projektowania wnętrza było stworzenie miejsca otwartego na spotkania. W projekcie zostały wykorzystane surowe materiały, które wprowadzają rzemieślniczy oraz swobodny charakter wnętrza. Z kolei drewniane elementy ocieplają dominujący metal oraz beton. Przechodząc ulicą przez okna browaru dojrzymy miedzianą kadź, w której warzone jest piwo oraz główny bar. Podświetlany kontuar został wykończony surową blachą, a nad nim widnieje konstrukcja podwieszana wykonana z metalowej siatki perforowanej. Subtelną dekoracyjność w lokalu wprowadzają zaprojektowane i wykonane dla browaru lampy z butelek po piwie. Podział przestrzeni pierwszego piętra wyznaczają regały na butelki zrobione z prętów żelbetowych. Na pierwszym piętrze oprócz tradycyjnej lady barowej, znajduje się “beer wall”, czyli samoobsługowy bar z piwem.
